I was scrounging around today trying to decide on a lunch and supper for us girls (since Daddy is in El Paso this week). We are going grocery shopping this afternoon, so we are a little low on supplies. For lunch, we are eating up the fresh fruits & veggies that are in the fridge. For supper, I whipped up something to cook in the crock pot.
This is what I threw together:
1 Package Rice a Roni Whole Grain Spanish Rice
4 boneless skinless chicken tenders (that is all I had!)
1 quart bag of homemade frozen black beans (or use a can of black beans drained)
1 can diced tomatoes with juice
Add to that about 1 1/2 cups of water
I will let you know how it tastes tonight!
*UPDATE
It was very good. The rice and seasonings were not spicy at all (a plus for me), but I think the chicken could have been seasoned a little more. Next time maybe I will sprinkle some fajita or another seasoning mix onto the chicken before I throw it in the mix.
